Probably because of the weather change, we had craving for sweets this week. I made this snack and was very happy with the yummy result!

Craisin and Nuts Granola Bars

A:
1 large egg
1 large egg white
2 T light brown sugar or 1/4 cup honey
1 T grapeseed oil
1 teaspoon ground cinnamon
   1/4 teaspoon salt - optional
1 teaspoon vanilla extract

B:
1  1/2 cup rolled oats
2/3 cup chopped craisins, or raisins soaked in 1T vinegar/apple cider
1/4 cup chopped pecans / nuts of your choice
1 tablespoon whole wheat flour or ground flax seeds
1/4 cup candied lemon or orange peel - optional
(use organic ingredients whenever possible)

1.   Preheat oven to 300F degrees. Line an 8-by-11-inch pan with foil. Coat with butter.
2.   Whisk A in a large bowl. Stir in B. Spread in pan.
3.   Bake until golden brown, about 30 minutes. Cool; cut into bars with a lightly oiled knife.
