1. 4-5 个苹果削皮切块,放入平底锅加一Tblbutter翻炒至软,大约5-7分钟,加 3 Tbl 的黄糖粉拌匀,浇上 2 tsp 的柠檬汁  1/2 tsp 的肉桂粉,关火。2. 烤箱预热至425 度。 3. 4 个鸡蛋,一杯牛奶,一杯面粉, 1 tsp 的香草精,混合搅拌均匀 (喜欢吃更松软的可以用厨师机快速打发),然后倒入炒苹果的平底锅 (讲究的方法是另外预热一个干净的平底锅,倒入糊糊以后再倒入炒好的苹果),425度烤20-25分钟。

 

 

不需要像做蛋糕一样打发,用stick blender 混合均匀即好,烤的时候因为温度很高,可以烤得很蓬松的。

 

我昨晚炒的苹果,糊糊用blendtec打好后整个容器放冰箱,干净的平底锅放烤箱,定时预热,早上起床后把糊糊倒入预热好的平底锅里,加上炒好的苹果,放入烤箱,定时25分钟,洗完澡正好苹果pancake做好。

Ingredients

  •         PANCAKE:
  •         3 large eggs, room temperature
  •         1 cup whole milk
  •         3/4 cup all-purpose flour
  •         1/2 teaspoon salt
  •         1/8 teaspoon ground nutmeg
  •         3 tablespoons butter
  •         TOPPING:
  •         2 tart baking apples, peeled and sliced
  •         3 to 4 tablespoons butter
  •         2 tablespoons sugar
  •         Confectioners' sugar

 

Directions

  • Preheat a 10-in. cast-iron skillet in a 425° oven. Meanwhile, in a blender, combine the eggs, milk, flour, salt and nutmeg; cover and process until smooth. 
    Add butter to hot skillet; return to oven until butter bubbles. Pour batter into skillet. Bake, uncovered, for 20 minutes or until pancake puffs and edges are browned and crisp. 
    For topping, in a skillet, combine the apples, butter and sugar; cook and stir over medium heat until apples are tender. Spoon into baked pancake. Sprinkle with confectioners' sugar. Cut and serve immediately.

 

Test Kitchen Tips

  • Many fruits can be used in place of the apples. Pears, berries, peaches or plums are all delish. If you use berries, just skip the precooking step.
  • For extra flavor, try adding a splash of almond or vanilla extract to the batter.

  •         TOPPING:
  • A
  •         2 tart baking apples, peeled and sliced
  •         2 tablespoons butter
  • B
  •         1 tablespoons sugar
  •         cinnamon 0.25 teaspoon 
  • Lemon juice 1 teaspoon

 

  • PANCAKE:
  • C
  •         2 Large eggs, room temperature
  •          1/2 cup whole milk
  •         1/2 cup all-purpose flour
  •         1/2 teaspoon salt optional 
  •         1/8 teaspoon ground nutmeg or vanilla
  •         2 tablespoons butter

 

 

  • Stirfry A, 5 to7 minute
  • Mix in B, while it’s hot.
  • Preheat oven and 8 inch cast iron skillet 
  • mix C well,  with stick blender.

425F, 20 to 25 minutes 

Cover the top with foil to prevent burning in small toaster oven.

Sprinkle top with confectioners sugar
