Pine Nuts Cookies

Modified 12/19/2017 based on Sardinian Style Amaretti Cookies 

ground almond 250 gm
brown sugar 125 gm
egg white 6
pine nuts 250 gm

**preheat oven 330F
line two 9x13 pans
prepare #8 piping nozzle to pastry bag

**beat egg white with sugar till hard tip.
mix in almond.
fill bag and make 2-inch circle, 1-inch inbetween each.
spread pine nuts, tuck in loose one into batter.
bake: lower rack 24 minutes; middle rack 26 minutes.
